Whether the focus is on pairing cheese with charcuterie, charcuterie with wine, or highlighting a particular technique in a new context, collaborations are unique educational experiences born from the incredible culinary talent in Chicago. These classes generally center around demonstrations and tastings rather than hands-on instruction. We maintain our commitment to locally raised animals, and these classes often become opportunities to showcase neglected cuts and techniques that are accessible for the home cook, but not always the most familiar.
